Is there anything more liberating than when a couple getting married come to you and DON'T have a picture of a cake they want you to copy?  They usually apologize and say they aren't sure what they want or they have some hand made sketches and some colors in mind or some thing like this or a something like that.  

Why are they apologizing?  I am jumping for joy when they show up.  Too many is the time when brides come in, leaf through the Martha Stewart Wedding magazine and say, "Can you do this?"  And you dutifully say, "Yes", trying hard to hide your utter boredom. 

Oh yes, they're pretty cakes.  And yes, we're a little jealous that our cake isn't in the magazine (congrats to all who have had their cakes in MS Wedding). Or maybe it's not that they thrust the  magazine in front of you with that threatening look.  Maybe it's more their tone.  "Can you do this?"  

Oh yes, I can do that, but I can do a Hell of a lot more than that.

Or

Yes, i can do dots on a cake with fresh flowers, but have you seen what I can really do?

I don't know.  I do know that there is no feeling in the world for a cake designer as when the client says....Just create, you're the decorator, not me.  Or, "what do you think of something like this?"

What do I think?  What do I think?  Oh my God, you actually think my opinion matters.

One thing I always promise the couple is that this is one part of their wedding day they will not have to worry about.  Period.  

All us wedding cake designers ask is for the chance.....
